These Freezer Breakfast Burritos from Skinnytaste are a much healthier option rather than picking up a burrito at your local fast-food joint on the way to work. They are quick to prepare, flavorful, and great to have on hand!

Recommendations

There really wasn’t much to making this recipe. It’s pretty easy to prepare. I did find that when I was to put 1/2 cup egg filling in the tortilla, I quickly discovered I did not have enough mixture to do that. So I would recommend more like 1/3 cup filling. Honestly, the tortillas don’t hold much more than that anyway.

Next time I might double the recipe because the burritos are small, and with two people, six burritos don’t last very long.

I did use the tortillas she recommended (Ole Xtreme Wellness), and I thought they worked well.

I tried two ways of heating them. For both, I defrosted the burritos overnight in the refrigerator. Once I tried the air-fryer, and that made the burritos nice and crispy, but when the seam side of the burrito was up, the air fryer blew it open, so that wasn’t ideal. Haha. I might try just leaving it seam side down the whole time. I also tried microwaving them, and honestly, I thought that was just fine. It isn’t as crispy, but it’s still very good.

Future Ideas/Variations

I would be interested to try these with breakfast sausage and maybe a frozen pepper/onion mixture.
