My Thoughts on This Recipe
This One Skillet Lemon Butter Chicken and Orzo recipe from Half Baked Harvest is a very convenient one pot meal that is full of lemon flavor.

Recommendations
I elected to use small chicken thighs for this dish, and I had four thighs for one pound of poultry. I think I would use thighs again next time because they are much more tender. I’m sure it would be delicious to leave the skin on, but I elected to take it off. I think one pound of chicken breasts would be about two breasts, so you might want to increase it if you are feeding four or more people.
Browning the thighs was a very messy ordeal. Grease was everywhere, and I burned myself. I did use my cast iron skillet, and I measured the oil and butter, so just be aware that you might want one of those grease guards over the top of your pan.
I couldn’t find a Meyer lemon, so I used a regular lemon, and that worked just fine. I would be curious to try it with the actual Meyer lemon because I hear that it is kind of like a cross between a lemon and an orange. The lemon flavor is really strong, so if you aren’t the biggest fan, you might want to reduce the lemon zest and juice a bit.
My husband’s main complaint about this was the kale. He thought it didn’t go well with the rest of the dish and was too chewy. He thought broccoli or spinach might be a better choice. I didn’t mind the kale, but I didn’t love it either (and I do love kale).
I also used thyme rather than dill because my husband doesn’t love dill either. Haha.
Future Ideas/Variations
I think you could mix this up by using other types of protein, such as pork chops, and different vegetables such as snow peas, brussels sprouts, spinach, broccolini, green beans or peas. There is always an option to change the citrus as well.
Final Thoughts
We thought this dish was good, and it was definitely convenient to have it all in one pan. I need to solve the grease splattering issue for next time, but I will keep this recipe for sure!
