My Thoughts on this Recipe
This Everyday Italian Salad from Gimme Some Oven is a perfect side salad for your next dinner- Italian or otherwise. It was inspired from the Olive Garden Salad, and the dressing is absolutely delicious.
Ingredients
The main ingredients are mixed greens, cherry tomatoes, croutons, pepperoncini peppers, Parmesan, olive oil, red wine vinegar, Dijon mustard, and some herbs. View the full recipe here.
Recommendations
This recipe calls for spring greens, which would be very good, but I happened to have Romaine, and so that is what I used. I also used store-bought croutons, and if I had time, I would definitely make my own next time.
The Olive Garden Salad also has black olives in it, I believe, so I will probably add those next time. I thought the pepperoncini were a nice touch.
The dressing is fantastic, and I will be repeating that for sure!
Future Ideas/Variations
This recipe is extremely versatile. I think you could add some protein, or do an antipasto version with salami, pepperoni, Provelone etc., and of course you can use whatever vegetables you have on hand!

This salad is going on repeat in our house! Give it a try!
