This Healthy Sheet Pan Dinner from Eating Bird Food is so quick to throw together, and it’s perfect for a healthy weeknight meal. Basically, you chop some veggies and sausage, drizzle with olive oil and season with salt and pepper, roast, and you are good-to-go!

Recommendations
This is a simple sheet pan dinner that only takes a few minutes to put together. I covered my sheet pan in foil to make clean up easy.
I also used a flavorful sausage from Trader Joe’s (Garlic and Herb), and I would definitely recommend something full-flavored because there isn’t a lot going on in this dish. Next time I will probably try the Spicy Italian Chicken Sausage.
I added red bell pepper to this because I had some, and you can use whatever veggies you have/like. I definitely recommend cutting the sweet potato very small, or it will not cook in time.
Next time I will add some sort of spice to the mix, maybe Trader Joe’s “Chili Lime” seasoning or some Creole seasoning. It was fine with the salt and pepper, I just think it could use a little more seasoning.
Future Ideas/Variations
This recipe can really be whatever you want it to be. Change up the veggies and sausage, and you will have all sorts of variations of this dish!
