This Rainbow Corn Salad from Designer Bags and Dirty Diapers is full of color and flavor due to all of the vegetables, fresh basil and Feta cheese. It is lovely to look at and would be perfect for your next barbecue.

Ingredients

Recommendations

This recipe is quite straight-forward, so I don’t have much to clarify. I made this earlier in the day in anticipation of dinner, and it was nice to have the flavors mingle. It also kept well for about five days in the refrigerator. I left the feta off until I served it each time.

It makes a LOT of salad. I would say about eight half-cup servings. We ate it three times and gave some away, so you might want to make this when you are feeding a crowd.

The first night, I forgot to add the Feta, and it was still delicious. So if Feta is not your thing, it is fine to leave it out. We did decide that the Feta added a nice flavor though, so I would recommend leaving it in if you do like it.

Future Ideas/Variations

I suppose you could add some arugula to make it more like a salad, or add additional vegetables that you like. It is difficult to mess up!
