My Thoughts on this Recipe

I found this Vanilla Birthday Cake with Old Fashioned Vanilla Buttercream from Once Upon a Chef when I was looking for a white cake to make for my husband’s birthday. I gave him a few recipes to choose from, and he chose this one, and I’m glad he did because this is a delicious white cake. This cake has 4.5 stars on her website from over 500 people, so I bet you will like it too!

Ingredients

Recommendations

When preparing the pans, I followed my usual prep, which is to butter and flour them, add parchment along the bottom of the pan, and butter and flour that. I learned to do this from the Barefoot Contessa, and I trust that the cake will come out of the pan when I do this. I do not trust using cooking spray, which is in this recipe.

Next time I will whisk the eggs a little more. Some people in the reviews said they had better results when the eggs were more fully whisked, and I had just done it lightly.

The almond extract in the cake was a delicious addition. The cake kind of reminded me of a sugar cookie flavor for that reason. I would definitely do that again.

The cakes took 30 minutes in my oven, and I had it on convection bake. I cooled the cakes for 15 minutes before flipping them over on a baking rack.

One thing I really appreciate about this recipe is that it makes enough frosting. It drives me nuts to have to make more or not be able to cover the cake the way I would like, so I’m thrilled that I can ice the cake with ease knowing there is more than enough frosting!

Future Ideas/Variations

This cake is great the way that it is, but next time I might try changing up the frosting to chocolate or strawberry.
