My Thoughts on this Recipe

This Pumpkin Spice Coffee Cake from Handle the Heat is insanely delicious! The cake is full of pumpkin spice flavor, it is moist, and there is this amazing streusel in between cake layers and on the top of the cake. To top it off, there is a maple glaze. I haven’t made a coffee cake in probably ten years, but this one is definitely on my list to repeat. I also like that it makes an 8×8″ pan instead of a 9×13″ because it’s not too much cake!

Ingredients

The main ingredients are butter, flour, brown sugar, pecans, cinnamon, granulated sugar, pumpkin, eggs, vegetable oil, sour cream, baking soda, baking powder, powdered sugar, maple syrup and spices. View the full recipe here.

Recommendations

I followed the recipe exactly as written, and it turned out perfectly. I will say it took about 45 minutes to finish baking in my glass Pyrex dish. Also, I needed another two tablespoons or so of maple syrup for the drizzle to be thin enough, but other than that, I just followed the directions!

I wouldn’t change a thing!
