About this Recipe

This Cowboy Caviar is one of our favorites! It is full of creamy beans, crisp green pepper, onion, sweet corn, fire-roasted tomatoes, spicy jalapeno, and flavorful Italian dressing. It is perfect for dipping with chips on a hot summer’s day, or for a serving of black-eyed peas for good luck on New Year’s. I’ve used it as a side salad or as a topping on greens. It’s extremely versatile and addictive!

Ingredients

The main ingredients are black-eyed peas, black beans, tomatoes, corn, green pepper, onion, jalapenos, garlic salt and Italian dressing.

Recommendations

This recipe is extremely simple, and it’s fast to put together. The main keys are to rinse and drain the beans, drain the corn and tomatoes, and use your favorite Italian dressing. I like to make this the day before I intend to use it, so everything has time to marry together, but that is not a requirement.

This is good as a side salad, a dip with chips, on top of greens for a simple salad or with a taco night. It’s extremely versatile and is a real crowd pleaser. Every time I take this somewhere, I am usually asked for the recipe.

Ingredients

  • 1 15 oz. can black-eyed peas rinsed and drained
  • 1 15 oz. can black beans rinsed and drained
  • 1 15 oz. can whole kernel corn drained
  • 2 14.5 oz. can fire-roasted diced tomatoes drained
  • 1/2 cup sweet onion diced
  • 2 medium green peppers diced
  • 1/2 4 oz. can diced jalapeno peppers (or more if you want it spicier)
  • 1 cup Italian dressing
  • 3/4 teaspoon garlic salt

Instructions

  • Combine all of the ingredients and refrigerate. Let set overnight, if possible.
