My Thoughts on this Recipe
This recipe for Spaghetti Squash and Meatballs in the Crock Pot has saved me when I have needed a quick, semi-healthy meal that doesn’t take a lot of preparation time. This recipe is hearty and filling with the meatballs, and the spaghetti squash gives you your vegetable, so you are good-to-go!
I absolutely love Spaghetti Squash, but unfortunately my husband doesn’t. He says he just “wishes it were spaghetti,” while he eats it. Haha. So I make him actual spaghetti when I eat it because that’s how I roll. The one Spaghetti Squash dish I have made that he likes is Spaghetti Squash Lasagna, so if you are in a similar situation as I am, then give that one a try.

This recipe really couldn’t be any simpler. Basically you put Spaghetti Squash, prepared meatballs and some marinara in the Crock Pot and wait. I will say, you want to make sure you have a quality meatball. I tried some turkey ones from Trader Joe’s and I was not a fan. I hate to say it, but it’s best if you make your own in advance and put them in the freezer. Unless of course, you have a favorite prepared meatball. I wouldn’t use raw meatballs here, but frozen ones do work!
I find a melon baller tool does a great job of removing the seeds, and I also like to put the squash in length-wise instead of as shown in the recipe picture. I just think it cooks better that way.
I like to use two regular sized jars of Marinara for this in order to coat all of the meatballs. I also top my Spaghetti Squash and Meatballs with Parmesan cheese and fresh basil.
Other than changing up the meatballs, or the marinara, there are not a lot of variations here.
This is a handy recipe to have and one that I make a few times a year. Give it a try!
