My Thoughts on this Recipe
This Ranch Cheddar Chicken from Everyday Dishes is a go-to weeknight recipe in our house. It is full of ranch flavor with a crispy panko and cheese crust. It only takes a few minutes to prepare, and it is a crowd pleaser. I just served this with some roasted broccoli and mashed sweet potatoes, but all you really need to do is add a vegetable.
Ingredients
The main ingredients are: chicken, ranch salad dressing, panko breadcrumbs, cheddar cheese and Parmesan cheese. View the full recipe here.
Recommendations
This chicken really couldn’t be much easier to prepare. I recommend placing the chicken in the ranch dressing in the morning and then coating it in the breading right before cooking. You can use your favorite ranch dressing. I usually use Primal Kitchen or Marzetti.
I have only made this with panko, so I don’t know how it would be with plain breadcrumbs, like Progresso. Depending on the dressing you use, you may want to salt and pepper your chicken before dipping it in the breadcrumb mixture.
You can also put the chicken under the broiler for a couple of minutes in order to brown the crust more, if you’d like.
Future Ideas/Variations
I really wouldn’t change much about this recipe. You could certainly experiment with the dressing, cheese or breadcrumbs, but I don’t think I would mess with it.
