Blueberry Muffin Baked Oats

Ingredients
  

  • 2 cups old fashioned oats
  • 2 ripe bananas
  • 2/3 cup milk of choice
  • 4 tablespoons peanut butter
  • 1/4 cup pure maple syrup
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries or raspberries

Method
 

  1. Preheat oven to 350.
  2. Combine all ingredients except the berries in a bowl. Gently stir in the berries.
  3. Grease the four 6 oz. ramekins. Evenly divide the mixture into the ramekins. To make the oats look prettier, place a few berries on the top of the oats and press them into the mixture.
  4. Bake for 25 minutes.

Notes

If you do not want to bake all four ramekins, you can bake fewer, refrigerate the leftover dough for one day and bake the rest the second day. I would not recommend keeping them for longer than that because the fruit breaks down.
