This Pork Tenderloin with Mango Salad recipe from Better Homes and Gardens is a great weeknight meal that is quick, affordable and healthy. It is a regular menu item in my kitchen, and I bet it will be in yours too.
Ingredients
The salad is basically just cucumber, mango, green onion and jalapeno, but the secret is the five spice powder and brown sugar. Recommendations
I have made this many times, and one thing I have learned is that the five spice powder you use, matters greatly. I prefer this one from Dean and Deluca. It has star anise, white pepper, cinnamon, fennel and cloves. I made it with another powder when I ran out, and it wasn’t nearly as good. Apparently, five spice powders can vary depending on where you buy them.
I usually make extra of the spice powder mixture. I use 3 tablespoons brown sugar and 3 teaspoons five spice. I then save 2 teaspoons of the mixture for the salad, and even then, I think it could use more.
I also recommend that you put the spice mix on the tenderloin and then salt the whole thing. Otherwise, it doesn’t have enough salt for me.
My husband asked for fewer green onions next time, so I will do that. I think two is probably enough.
Final thoughts
Try this one night, maybe during the spring/summer, when you want something quick, light and healthy. It doesn’t disappoint.
