This Ranger Cookie recipe is from my mom, and I have fond memories of having these cookies while growing up. The mixture of oats, coconut and corn flakes makes these cookies chewy with that perfect little bit of crunch.

Ranger Cookies
Ingredients
- 1 cup brown sugar
- 1 cup granulated sugar
- 1 cup shortening
- 2 eggs, beaten
- 1 teaspoon vanilla extract
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 2 cups quick oats
- 2 cups Corn Flakes
- 1 cup coconut
Instructions
- Preheat oven to 375 and grease a baking sheet.
- Cream sugars with shortening. Add the eggs and vanilla.
- Sift together dry ingredients and add to wet mixture a little bit at a time.
- Then add the oats, cereal and coconut.
- Using a cookie scoop, scoop the dough into balls, roll with your hands and press down lightly with a fork.
- Bake cookies for 12-14 minutes.
