This Ranger Cookie recipe is from my mom, and I have fond memories of having these cookies while growing up. The mixture of oats, coconut and corn flakes makes these cookies chewy with that perfect little bit of crunch.

Ingredients

  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1 cup shortening
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups quick oats
  • 2 cups Corn Flakes
  • 1 cup coconut

Instructions

  • Preheat oven to 375 and grease a baking sheet.
  • Cream sugars with shortening. Add the eggs and vanilla.
  • Sift together dry ingredients and add to wet mixture a little bit at a time.
  • Then add the oats, cereal and coconut.
  • Using a cookie scoop, scoop the dough into balls, roll with your hands and press down lightly with a fork.
  • Bake cookies for 12-14 minutes.
