About this Recipe

I’ve only made these Chicken Parmesan Meatballs twice, but they have quickly moved to our “Favorite Recipes” category because they are amazing! This time when I made them, my husband immediately said, “Now THAT’S a five-star recipe!”

I mean, it’s Chicken Parmesan, in the form of a meatball! What’s not to like?! What’s Gaby Cooking has really outdone herself with this recipe!

Ingredients

The meatballs consist of chicken, parmesan, breadcrumbs, eggs and several herbs and spices, and they are stuffed with mozzarella! Full recipe here.

Recommendations

The first thing I have noticed with this recipe is that my chicken is usually pretty wet. I’m not sure if it’s the brand I buy or what, but I have to add a little more Panko breadcrumbs to the mixture to get it to be the correct texture. I’d say I end up using about 1/2 cup rather than 1/3 cup. You might just be aware that you may need to add more. I suppose you could also try one egg instead of two, but I have not done that.

Secondly, it’s important to dry off the fresh mozzarella balls completely, or the meatballs will not adhere around the mozzarella. Also, some stores (such as Trader Joe’s) call these balls “ciliegine,” and that’s what I used. I needed 16 balls, and there were plenty in the regular container.

I also elected to drain the oil after browning the meatballs because I didn’t want all of the extra fat, but I did try to keep the brown bits at the bottom of the pan.

For the sauce, I used Trader Joe’s Tomato Basil Marinara, and it was delicious.

I served my meatballs with Spaghetti Squash, and my husband’s with pasta because he thinks that Spaghetti Squash “just makes [him] wish it were spaghetti.” Haha. This recipe made about 16 golfball-sized meatballs for me.

Final thoughts

I would absolutely entertain with this recipe because it is amazing. I recommend making this ASAP. You will not be disappointed!
