My Thoughts on this Recipe

This Healthy Samoas Cookie Bars recipe from Salted Plains is a clean, bar-version of the Samoa cookies. They are gluten free and vegan, so you can feel better about eating them then something processed and off the shelf. The bars are very sweet with a chewy texture.

Ingredients

Recommendations

I made the caramel with my Vitamix blender, and the recipe calls for a “high speed blender.” Blending these dates into caramel is no easy task, and my impression is that you will need a really good quality blender, or you will rip it up and have issues making this caramel. So if you don’t have a high speed blender, I would not make this recipe.

I used unsweetened almond milk for the milk and coconut oil in the crust, and that all worked well.

I had a difficult time getting the chocolate to stick to the top of the bars. You will see in the picture that it broke and came off the bar, and I don’t know if that’s the nature of the recipe, or just a fluke.

My husband’s work colleagues enjoyed these bars!

Future Ideas/Variations

I don’t have any ideas for how to change this recipe, but Salted Plains has many gluten-free recipes from which to choose!

Final thoughts

This is a nice alternative to a Samoa Cookie, and it definitely is more nutritious than the other cookies!
