My Thoughts on this Recipe
This Spaghetti Squash Lasagna from Well Plated is such a delicious dish that feels indulgent. I think it should be called “Twice Baked Spaghetti Squash Lasagna” because it’s kind of like a twice baked potato in that you mix the squash with cheese and spinach, add it back to the base, and bake it again with turkey meat sauce on top. I will say, my husband dislikes spaghetti squash “because it makes [him] wish it was spaghetti,” but he loved the texture and flavor of this dish because of the way it was assembled. I can’t express how happy that made me- finally a squash recipe he will like!
Also, this recipe is only about 450 (very filling) calories if everyone eats 1/2 of a whole squash, and with 21 grams of carbs, and 39 grams of protein, I think it’s a win-win! I think I could eat this once a week!
Ingredients
The main ingredients are spaghetti squash, ground turkey, tomato sauce, frozen spinach, ricotta, mozzerella and parmesan cheeses, garlic and some seasonings. View the full recipe here.
Recommendations
This is a simple meat sauce made with ground turkey, tomato sauce from a jar and seasoning. I did have probably double what I needed (and she said there would probably be extra), so I froze it for next time. So you might be aware that there will probably be extra sauce.
For the cheese mixture, I elected to use whole milk ricotta, (just a personal preference) and I selected mozzarella for the shredded cheese. Next time I would like to try the fontina.
Next time, I’m going to taste the squash/cheese mixture because I felt it needed more salt than it called for, and that surprised me because of the salt in the cheese.
It also reheated pretty well in the microwave, so that is a plus!
Future Ideas/Variations
I don’t think I would change anything about this recipe. I might try a different cheese or jar of sauce, but it’s great just like it is!

This is a tasty dish that I’m already looking forward to making and eating again!
