My Thoughts on This Recipe

This Crockpot Creamy White Chicken Chili recipe from Carlsbad Cravings, is absolutely delicious! She lightened the recipe, so it’s 319 calories for a serving (out of eight) with 6g fat, 22g protein, 10g fiber and 40g carbohydrates. This is a very hearty soup filled with three cans of beans, so is filling and full of fiber.

I am usually terrible with leftovers, but this was one recipe I was looking forward to eating again later in the week. I loved the flavor of this chili, and the toppings made it over-the-top!


The chili consists of Great Northern Beans, chicken breasts, chicken broth, onion, green chilis, tomatoes, creamed corn, garlic, and many spices. View the full recipe here.


She uses an interesting technique here where at the end, you remove some of the soup and blend it with beans, cornstarch, cream cheese and cilantro in the blender, and then you add it back to the chili. As it heats up, it gets thicker and creamier. It works great, and I never would have thought of that!

You can cook this on the low or high setting. I elected to use the high setting for this, and 3 hours was perfect.

The toppings really elevate this chili, so do not go without them! I used tomatoes, jalapenos, avocado, cheese, tortilla chips and cilantro. Feel free to experiment with your favorites!

Future Ideas/Variations

You could certainly change up the beans and/or add vegetables to the mix, but honestly, I think this chili is great as-is. The one thing I might do is reduce the beans because my body doesn’t tolerate fiber well.

Final Thoughts

This Creamy White Chicken Chili is comforting and delicious, and I will be making it again soon! Give it a try!
