My Thoughts on this Recipe

This Honey Mustard Chicken Salad from Damn Delicious is nothing short of extraordinary! Both my husband and I thought this was so delicious, and we can’t wait to make it again. The chicken thighs have the most wonderful honey mustard flavor, and that combined with the strawberries, corn, avocado and bacon is just delicious. You really need to try this one!

Recommendations

This recipe calls for a honey mustard marinade, and I marinated my chicken thighs for about 6 hours, as written. I think it would still be good if you didn’t have that much time. It’s also nice that you only have to make one mixture (which you save part of for the salad dressing).

When I need bacon for things like this, I like to put about three paper towels on a large plate, place about 5-6 pieces of bacon on top, then add another layer of at least two paper towels. I then microwave that for 4-5 minutes, or until the bacon is perfectly crispy, and the paper towels soak up all of the grease. It works great! Also, cleaning is a breeze!

I don’t think one head of romaine is enough for this salad. I suppose it depends on how big that head of romaine is, but I think I used about one head of romaine per person, and that seemed about right.

I elected to cook my chicken thighs in my air fryer. I absolutely love that thing. It took about 14 minutes (flipping halfway through), and the thighs were perfectly caramelized and juicy. I can’t recommend this fryer enough! I use it all of the time!

For the corn, I just used fresh, raw corn off of the cob, and we loved it.

Future Ideas/Variations

I don’t think I would change anything about this recipe, but you could definitely change it up with different types of meat/poultry or fruit/vegetables.

Final thoughts

This salad is going to be a staple in our house! You have to try it!
