About this Recipe

This Pasta Ponza is a go-to dinner recipe in my house. Giada De Laurentiis was in town several years ago for a cookbook tour, and she mentioned that Pasta Ponza was a “must try” recipe in her book. I went home and made it, and I have loved it ever since. It is a light pasta with a “sauce” made from cherry tomatoes, breadcrumbs, olive oil and cheese.

Recommendations

This recipe calls for a lot of cherry tomatoes. I usually buy two pints. If you can get heirloom cherry tomatoes, those are good too.

I typically use Rigatoni for this dish because then the capers get inside the noodles, and that is a good thing.

Make sure you don’t forget to save the pasta water because you will definitely need it!

Do also make sure to let the tomatoes and breadcrumbs set for a few minutes (ideally 10 min) after they are cooked.
