My Thoughts on this Recipe

You might be wondering what makes this recipe so special. It’s the fact that there are double the marshmallows, and that everything gets toasted while cooking in the pan, so there is an ooey-gooey and roasted marshmallow quality to these treats. These Rice Krispie Treats are one of our favorites, and they are a go-to when you need a quick dessert.

The main ingredients are Rice Krispies, marshmallows, vanilla and salt.

Recommendations

I really think that one of the keys to this recipe is the pan I cook it in. I swear by this Le Creuset Signature Braiser, 3.5 qt pan. Yes, I know it is an investment, but I use this pan all the time for everything from tossing pasta to baking chicken. It is such a handy size, and I think it’s the reason these treats get such a delicious flavor.

Secondly, have those Rice Krispies ready to go, and pre-measured, or have a friend measure them into your pan while you stir. You have to move quickly with this recipe, and you don’t have time to be measuring the cereal while adding to the marshmallows.

Finally, hands with cold water on them are the key to maneuvering through that sticky marshmallow mixture. Be very careful when you press the mixture into the pan because it is hot, but I find with cold hands, it works just great.

Future Ideas/Variations

I don’t think I would change anything about this recipe, but I have used Cocoa Krispies, and I might try adding some peanut butter sometime to the marshmallow mixture.

Ingredients
  

  • 1/4 cup butter
  • 2 10 oz bags miniature marshmallows
  • 10 cups Rice Krispies
  • 2 teaspoons vanilla extract
  • pinch salt

Instructions
 

  • Grease a 9 x 13 pan with a little cooking spray or butter.
  • In a very large and deep pan (such as the Le Creuset 3.5 qt. Braiser), melt the butter on medium heat. Wait until it turns a light golden brown.
  • Add one bag of marshmallows to the butter, stirring constantly. Once that bag is somewhat melted, add the second bag, and turn the heat to low. Melt the marshmallows completely.
  • Add the vanilla and salt to the marshmallow mixture.
  • Keeping the heat on low, add about 4 cups of the Rice Krispies, stirring constantly. (I use two rubber spatulas to do this, and toss it like a salad.) Once the cereal is incorporated, add another 3 cups of cereal and toss. You will see the cereal and marshmallows start to get a little toasted. Finally add the last 3 cups of cereal, and remove from heat.
  • Transfer the mixture into the greased 9 x 13" pan. Wet your hands with cold water, and gently press down on the mixture until it is packed in the pan. (Be careful. It's hot.)
  • Let the treats sit for at least 30 minutes and cut into 12 squares.
