My Thoughts on this Recipe

These Thai Basil Chicken Bowls from Damn Delicious, are outstanding. Not only that, but they are healthy and fast. Chungah says this is her favorite recipe from her Damn Delicious cookbook, and I see why! I have decided that, like her, I could eat these once a week!

Ingredients

Recommendations

This recipe is quite straight-forward, so I don’t have much to clarify.

I went to three stores looking for the Thai chili pepper, and I could not find it, so I settled on a Serrano pepper, which worked just fine. I have also used Jalapeno for the pepper. You can definitely tone down the heat of this recipe although neither my husband nor I thought it was very spicy. In fact, I added Sriracha to mine.

Since making this a few more times, I have started to increase the sauce to 1.5 times the recipe, and I add a teaspoon of cornstarch to thicken it a little bit. Otherwise it can be kind of soupy.

I did have to turn up the heat after I added the sauce in order to get it to thicken. It’s not in the directions, so you might be aware that it may be necessary.

I used the Trader Joe’s frozen Organic Jasmine Rice for this, and all I had to do was microwave it for three minutes, and I had rice! I will definitely take that shortcut in the future.

Future Ideas/Variations

This recipe can really be whatever you want it to be. Change up the veggies and/or protein, and you will have all sorts of variations of this dish! That said, I will be making it as written!

Final thoughts

This is perfect for a quick, easy, healthy weeknight meal.
