My Thoughts on this Recipe

This Loaded Summer Cauliflower Salad from Tasty is phenomenal. It is basically like a potato salad using roasted cauliflower instead of potatoes, topped with bacon, cheddar, hard-boiled eggs and scallions. It is absolutely delicious and different from your average pot luck salad.

Recommendations

This salad uses hard-boiled eggs as a topping, and I cooked my eggs in my air fryer. You know that I love my air fryer, and this takes about 12 minutes on 260, and they are done!

For the bacon, I cooked it in the microwave. I placed the bacon on about three paper towels, topped the bacon with another paper towel, and I microwaved for about 4.5 minutes. It comes out super crispy and not full of grease!

I found that I only needed 1/2 cup of mayonnaise for the dressing to fully cover my cauliflower. I will confess that I used light mayonnaise to try to save some calories. I know it is not the most nutritious choice, but it did lighten it quite a bit, and it still tasted great.

The lemon juice is a fantastic addition! I almost forgot it, but I am so glad it was in there because it adds an excellent flavor to the dressing.

Future Ideas/Variations

You could definitely change up this recipe with different types of vegetables, but I really like it the way that it is.
