My Thoughts on this Recipe

These Zucchini Pizza Boats are sooooo good! Well Plated has created a simple, tasty, and healthy meal that is quick to make and that the family will love. Although it is zucchini instead of pizza, it actually tastes like pizza, and I think kids will be excited about them. These will become a regular meal in our house!

Ingredients

Recommendations

The first tip about this recipe is to scrape out the seeds from the zucchini, as instructed. I thought this was so smart because it keeps the moisture out of the zucchini boats.

I used Classico brand pizza sauce, Quattro Formaggio from Trader Joe’s as my cheese, which is Parmesan, Asiago, Fontina and Provolone. I also used the mini pepperoni, and they are so perfect for this dish! I did use the optional Italian seasoning and red pepper flakes and topped each pizza boat with fresh basil.

I did elect to broil these as directed for about two minutes at the end, and I definitely recommend it. We liked these so much that since I have leftover ingredients, I’m going to make them again this week!

Future Ideas/Variations

Obviously, with pizza there are so many options for creativity. You can change up the sauce with pesto or alfredo, add various meat and veggie toppings, and really make these whatever you want them to be!

Final thoughts

This is perfect for a quick, easy, healthy weeknight meal.
