My Thoughts on this Recipe

This Summer Grilled Chicken Power Salad from What’s Gaby Cooking is full of summer flavors and textures. You’ve got tender chicken, sweet blueberries, crunchy bacon, salty feta, creamy avocado, sweet corn and chewy greens. This all comes together with a champagne vinaigrette for a super delectable and satisfying salad!

Recommendations

This recipe calls for you to grill the chicken, and I will admit, I took a shortcut and used Rotisserie Chicken Breast. I have no doubt that the grilled chicken is wonderful, but it’s an easy step to skip.

My blueberries were a bit tart, which my husband really liked, but I think any berry would work well here.

When I need bacon for things like this, I like to put about three paper towels on a large plate, place about 5-6 pieces of bacon on top, then add another layer of at least two paper towels. I then microwave that for 4-5 minutes, or until the bacon is perfectly crispy, and the paper towels soak up all of the grease. It works great! Also, cleaning is a breeze!

For the corn, I just used fresh, raw corn off of the cob, and we loved it.

I elected for Feta rather than Goat Cheese, and I would use that again.

The dressing made more than twice what we needed. Of course it can be used for other salads, but I would definitely halve it next time. The recipe made two large salads for us.

Future Ideas/Variations

I don’t think I would change anything about this recipe, but you could definitely change it up with different types of meat/poultry or fruit/vegetables.
